4-6 ozcooked and cooled boneless chicken breast, loosely diced
1/2 mediumred onion
1/8-1/4 tspcayenne pepper, powdered
·salt and pepper, to taste
1/4 cmayonnaise, light
1-2 Tbspdijon mustard
1 largetomato, top cut off and hollowed out
·lettuce leaves, (if desired)
How to Make Stuffed Tomato
- Place chicken and onion in the bowl of a food processor.
Blend until finely ground.
- Mix in cayenne, salt & pepper, mayo and dijon.
- Spoon mixture into hollowed out tomato.
Place on bed of lettuce (if desired).
- (There will most likely be some mixture left over; would make a good sandwich on a small wheat pita).
