Had some left over chicken and just threw this together. It came out yummy, so I thought I would share.

Ingredients
- 4-6 ounces cooked and cooled boneless chicken breast, loosely diced
- 1/2 medium red onion
- 1/8-1/4 teaspoon cayenne pepper, powdered
- - salt and pepper, to taste
- 1/4 cup mayonnaise, light
- 1-2 tablespoon dijon mustard
- 1 large tomato, top cut off and hollowed out
- - lettuce leaves, (if desired)
How To Make stuffed tomato

Step 1Place chicken and onion in the bowl of a food processor. Blend until finely ground.

Step 2Mix in cayenne, salt & pepper, mayo and dijon.

Step 3Spoon mixture into hollowed out tomato. Place on bed of lettuce (if desired).

Step 4(There will most likely be some mixture left over; would make a good sandwich on a small wheat pita).
