This recipe is a favorite of my daughter Natasha, I make it with ground turkey...but you can also make with ground chicken, pork or beef.

Ingredients For stuffed cubanelle peppers

  • 4
    cubanelle peppers
  • 2 lb
    ground turkey or chicken
  • 1 sm
    finely diced onion
  • 2 clove
    smashed garlic
  • 2 Tbsp
    olive oil
  • 16 c
    tomato sauce
  • 8 oz
    can of chopped tomatoes
  • 1 sprig
    cilantro
  • 1 sprig
    parsley
  • 1/2 tsp
    salt
  • 1 c
    white wine

How To Make stuffed cubanelle peppers

    cut peppers in half, the long way, take out seeds.
  • 2
    in a bowl mix together the ground turkey or chicken with the onions,garlic & salt
  • 3
    stuff the peppers, in a large wide pot, put the tomato sauce and half the can of chopped tomatoes & the white wine, place the peppers on top of the sauce and simmer for about an hour...basting the peppers every 15 mins with the sauce... add in chopped cilantro & parsley..
