strawberry-lime marinade (for chicken/pork)
This was part of an entry I submitted for the South Carolina Strawberry Festival recipe contest. Although I did not win first place, I was honored to receive the "Queen's Choice" award and a yellow ribbon. The strawberries came from my own garden and I was lucky enough to have a plentiful amount of them to pick. (for the salsa, see my Strawberry Salsa recipe). Ingredients
- 1 cup lime juice (fresh squeezed is best)
- 1/2 cup vegetable oil
- 1/2 cup olive oil, light
- 2 teaspoons ground ginger
- 1 cup strawberries, fresh (crushed)
- 2 teaspoons dill seeds
- 2 teaspoons white sugar
- 2 teaspoons honey
How To Make strawberry-lime marinade (for chicken/pork)

Step 1Blend all ingredients together and refrigerate.

Step 2Use as a marinade for chicken or pork, giving at least 2 hours of marinade time. You can also brush this on during cooking. Larger batches can be bottled and refrigerated for up to 2 weeks.
