strawberry-lime marinade (for chicken/pork)

This was part of an entry I submitted for the South Carolina Strawberry Festival recipe contest. Although I did not win first place, I was honored to receive the "Queen's Choice" award and a yellow ribbon. The strawberries came from my own garden and I was lucky enough to have a plentiful amount of them to pick. (for the salsa, see my Strawberry Salsa recipe). Ingredients

  • 1 cup lime juice (fresh squeezed is best)
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil, light
  • 2 teaspoons ground ginger
  • 1 cup strawberries, fresh (crushed)
  • 2 teaspoons dill seeds
  • 2 teaspoons white sugar
  • 2 teaspoons honey

How To Make strawberry-lime marinade (for chicken/pork)

  • Step 1
    Blend all ingredients together and refrigerate.
  • Step 2
    Use as a marinade for chicken or pork, giving at least 2 hours of marinade time. You can also brush this on during cooking. Larger batches can be bottled and refrigerated for up to 2 weeks.
