strawberry chicken

Have not tried this yet, but since I am restricted to lean poultry and fish, will soon try this and give any pointers or tweaks. It is low fat.

Ingredients
- 12 - skinless chicken thighs (about 2-2 1/2 lbs
- 1 can 8 oz. low sodium tomato sauce
- 1 cup sugarfree strawberry jam or" just fruit" spread
- 2 tablespoons red wine vinegar
- 1 tablespoon chili powder
- 1/2 teaspoon each ginger and thyme
- 3 cups hot cooked rice
- 1/2 cup thinly sliced green onion
How To Make strawberry chicken

Step 1mix sauce, jam, spices, vinegar in casserole dish

Step 2place thigh on top, turning to coat with sauce

Step 3bake in a 400 degree preheated oven, basting occassionally until meat is tender and ready to fall off the bone. About 45 minutes

Step 4spoon rice on platter or individual plates, top with chicken and sauce, topping with green onions
