Have not tried this yet, but since I am restricted to lean poultry and fish, will soon try this and give any pointers or tweaks. It is low fat.

  • 12
    skinless chicken thighs (about 2-2 1/2 lbs
  • 1 can(s)
    8 oz. low sodium tomato sauce
  • 1 c
    sugarfree strawberry jam or" just fruit" spread
  • 2 Tbsp
    red wine vinegar
  • 1 Tbsp
    chili powder
  • 1/2 tsp
    each ginger and thyme
  • 3 c
    hot cooked rice
  • 1/2 c
    thinly sliced green onion

How to Make Strawberry Chicken


  1. mix sauce, jam, spices, vinegar in casserole dish
  2. place thigh on top, turning to coat with sauce
  3. bake in a 400 degree preheated oven, basting occassionally until meat is tender and ready to fall off the bone. About 45 minutes
  4. spoon rice on platter or individual plates, top with chicken and sauce, topping with green onions
