Ingredients
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 3/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 3/4 pound boneless, skinless chicken breasts, cut into 2 x 1/2 " strips
- 2 tablespoons olive oil, divided
- 1 large onion, thinly sliced
- 1/2 pound fresh baby bella mushrooms, sliced
- 1/4 cup sour cream (lowfat if preferred)
- 1 teaspoon pickled jalapenos, chopped
- 4 low-calorie/low fat flour tortillas
- 2 green onions, thinly sliced
How To Make stovetop chicken and mushroom fajitas

Step 1Combine spices with 1/2 teaspoon salt in a bowl and add the chicken, tossing to coat. Set chicken aside.

Step 2Heat 1 tbsp. oil in a skillet over medium-high heat. Add the onion and cook until softened. Add the mushrooms and remaining salt. Cook, stirring occasionally, until softened. Transfer onions and mushrooms to a plate.

Step 3Add second tbsp. of oil in the same skillet over medium-high heat. Add the chicken and cook until browned and cooked through completely.

Step 4Return the onion mixture to the chicken and heat through.

Step 5Combine the sour cream with the pickled jalapenos. Warm tortillas in the oven or microwave. Place about 1 cup of chicken mixture on the tortilla and garnish with sour cream and scallions. Feel free to add cheese, cilantro, or your choice of topping.
