Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 3/4 pound boneless, skinless chicken breasts, cut into 2 x 1/2 " strips
  • 2 tablespoons olive oil, divided
  • 1 large onion, thinly sliced
  • 1/2 pound fresh baby bella mushrooms, sliced
  • 1/4 cup sour cream (lowfat if preferred)
  • 1 teaspoon pickled jalapenos, chopped
  • 4 low-calorie/low fat flour tortillas
  • 2 green onions, thinly sliced

How To Make stovetop chicken and mushroom fajitas

  • Step 1
    Combine spices with 1/2 teaspoon salt in a bowl and add the chicken, tossing to coat. Set chicken aside.
  • Step 2
    Heat 1 tbsp. oil in a skillet over medium-high heat. Add the onion and cook until softened. Add the mushrooms and remaining salt. Cook, stirring occasionally, until softened. Transfer onions and mushrooms to a plate.
  • Step 3
    Add second tbsp. of oil in the same skillet over medium-high heat. Add the chicken and cook until browned and cooked through completely.
  • Step 4
    Return the onion mixture to the chicken and heat through.
  • Step 5
    Combine the sour cream with the pickled jalapenos. Warm tortillas in the oven or microwave. Place about 1 cup of chicken mixture on the tortilla and garnish with sour cream and scallions. Feel free to add cheese, cilantro, or your choice of topping.
