  • 3 c
    cooked chicken, cubed
  • 1 box
    frozen spinach, thawed
  • 8 oz
    penne pasta, whole wheat
  • 1 can(s)
    14oz. small diced tomatoes undrained
  • 1 c
    chopped onion
  • 1 pkg
    8 oz. onion & chive cream cheese
  • 1-1/2 can(s)
    mozzarella cheese, shredded
  • ·
    salt & pepper to taste
  • 1 Tbsp
    italian seasoning

How to Make Spinach, Chicken & Pasta Casserole


  1. Saute onions in olive oil until soft. Transfer to bowl and set aside.
    Cook Pasta according to box directions and drain.
  2. Add all ingredients (except the mozzarella cheese) to the bowl. Stir until well mixed. Pour into a oiled 7x11 casserole dish. Top with mozzarella cheese. Cover and bake for 30 minutes. Uncover and bake for about 15 minutes until brown and bubbly.
