spinach and tomato meatloaf

My mom made several variations of this meatloaf recipe while we were growing up to make sure we got our veggies in for the day. Now we make it with ground turkey for a lighter meal.

Ingredients

  • 2 pounds ground chuck (for healthier dish use ground chicken or turkey)
  • 1 can fire roasted tomatoes, diced
  • 8 ounces canned tomato sauce
  • 2 large eggs
  • 3/4 cup italian bread crumbs
  • 3/4 package frozen spinach (using frozen spinach will add moisture to the dish)
  • 1/2 cup barbecue sauce
  • 1/2 cup parmesan cheese

How To Make spinach and tomato meatloaf

  • Step 1
    In a large mixing bowl add ground beef and eggs. Stir until eggs are beaten.
  • Step 2
    Add remaining ingredients and mix well. Salt and pepper to taste.
  • Step 3
    Place mixture in a greased meatloaf pan and bake for 1 hour at 375 degrees.
  • Step 4
    Drain excess grease before serving. Ready to serve!
