A favorite in my hometown in upstate NY. If you lived 30 minutes away in any direction, you NEVER heard of these;trust me, no matter where you live this will become a family favorite

Ingredients

  • 4 pounds chicken breasts
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 - lemons, juiced
  • 1 tablespoon rosemary
  • 1 tablespoon parsley chopped
  • 2 cloves garlic crushed
  • 1 - small onion chopped
  • 1/4 teaspoon black pepper
  • 1 teaspoon oregano, dried
  • 1 teaspoon paprika
  • 1 teaspoon sweet basil (dried)
  • 1 teaspoon celery salt
  • 1 - loaf of sliced italian bread (fresh)

How To Make spiedies

  • Step 1
    The original recipe called for cubes of pork,veal, lamb and/or beef. Moving to a healthier option, most use chicken breast cut into one inch cubes
  • Step 2
    Add other ingredients in order, stir well. Cover and refrigerate 24hrs. Stir at least 3 times during the marinating process
  • Step 3
    Place 4-6 pieces on each skewer, grill 10 minutes max or until pink disappears. Add to the end of the skewer a piece of Italian bread, hand it over and tell your eager guests to wrap the bread around the skewers pulling meat into the bread and ENJOY!!
