spicy szechaun stir-fry
Finding tasty foods while trying to eat healthy is important to me! It doesn't have to lack in flavor to be healthy. This is my take on Szechuan Chicken. This was spicy, slightly crunchy and very tasty. Hope you enjoy!

Ingredients
- 1 pound chicken breast, cut into bite size pieces
- 4 tablespoons cooking oil
- 1 teaspoon red pepper flakes
- 2 teaspoons ginger powder
- 2 teaspoons garlic, minced
- 1 cup carrots, cut into thin strips
- 1 cup broccoli florets
- 1 large bell pepper, julienne
- 1 medium onion, julienne
- 1/4 teaspoon cayenne pepper
- 2 tablespoons soy sauce, light
- 1/4 cup rice wine, cooking sherry or cooking wine
- - salt to taste, optional
- - toasted sesame seed
- - cooked rice
How To Make spicy szechaun stir-fry

Step 1Rinse chicken and pat dry with paper towels; cut into bite size pieces. Set aside.

Step 2Prepare vegetables; set aside.

Step 3Heat a large Wok over a high heat until hot; add 2 tablespoons of the oil. Add pepper flakes, ginger and garlic; stir fry for 1 minute.

Step 4Add carrots and stir fry for 1 minute and then add remaining vegetables and sprinkle with cayenne; stir fry of 1 minute.

Step 5Add chicken, soy sauce,wine and salt if desired; stir fry until chicken is cooked and the vegetables are cooked but al dente (about 5 minutes).

Step 6Serve over rice; sprinkle with toasted sesame seed.
