I made this with turkey kielbasa to make it healthier, but you can use regular, smoked kielbasa.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1"-chunks
  • 1 pound smoked turkey kielbasa, cut into 1"-slices
  • 1/2 pound medium shrrimp, peeled, deveined
  • 1 - 28 oz can crushed tomatoeas, undrained
  • 1-3/4 cup chicken broth
  • 1 cup uncooked whole grain rice
  • 1/2 cup chicken broth
  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 1 large onion, chopped
  • 4 teaspoons cajun seasoning
  • 1 teaspoon garlic powder

How To Make spicy mardi gras stew

  • Step 1
    In lg soup pot, over medium heat. combine all ingredients, mix well.
  • Step 2
    Cover, cook for 15 mins. Reduce heat to low. Simmer 35 min more, or until rice is fully cooked.
  • Step 3
    Ladle into bowls and enjoy w/ some crusty French bread!
