We love curry in the winter but it's too hot for summer fare. I created this rub to satisfy our urge for curry. Works great with a green salad for a light summer meal!

Ingredients
- 2 tablespoons garam masala
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon rubbed sage
- 4 large boneless chicken breasts
- 1/4 cup olive oil
- 4 slices lime zest, cut 1x2 inches, plus the juice of one lime
- 1 pinch kosher salt

Step 1Combine all dry spices. Rub chicken pieces with seasoning. Set aside on wax or parchment paper.

Step 2Place olive oil in a large skillet; add a pinch of salt. Swirl oil around the skillet to combine and melt the salt in the pan. Set head to medium; wait for oil to warm up and salt to melt before placing chicken in the skillet.

Step 3Place chicken pieces into the skillet, turning every 5-6 minutes. After the first turn, add the lime zest to the skillet and continue cooking. Depending on the thickness of the breasts you are using, you may need to lower the heat until chicken is thoroughly cooked. This chicken has a dark, cajun appearance when finished. Squeeze lime juice on chicken before serving. Juicy on the inside; spicy on the outside.
