This is a simple ginger marinade with a couple of spices. The chicken is tasty but does not emit a sharp flavor. It’s good with or without barbecue sauce.

Ingredients
- 1/2 teaspoon fresh or candied ginger, finely cut
- 1/2 teaspoon Chinese five spice powder
- dash ground anise
- 2 teaspoons low sodium soy sauce
- 1 tablespoon toasted sesame oil
- salt and pepper, to taste
- 2 chicken quarters
How To Make spicy ginger chicken

Step 1Place all ingredients in a container and mix well.

Step 2Place chicken in a container, pour the mixture over top, and toss.

Step 3Refrigerate for six hours to overnight. Turn chicken every two to four hours.

Step 4Prior to grilling, let sit at room temperature no more than 20 minutes for even grilling. Discard any remaining marinade.

Step 5Grill over medium coals or gas flame. Turn chicken every five minutes until center thigh reaches the temperature of 170.

Step 6Let meat rest for five to ten minutes, then serve.
