Ingredients

2 lb
boneless chicken breast (cut in 1inch squares)
1 lb
thinly sliced bacon
1 c
coconut milk
1 tsp
salt (or to best suit your taste)
1 tsp
black pepper
1 Tbsp
basil paste or fresh basil (chopped)
1/2 tsp
boullion
1 Tbsp
dill, fresh (chopped)
1 Tbsp
ginger
1 Tbsp
onion

How to Make Spiced coconut grilled chicken

Step-by-Step

  • 1Blend all ginger, onion, bouillon, basil paste, black pepper and salt together with coconut milk and set aside.
  • 2Wrap chicken with bacon and skew with a wooden skewer or metal skewer if you decide to grill on open fire.
  • 3Dredge the chicken in the coconut mixture and allow to soak the juices for about 30 minutes.
  • 4Grill for about 20 minutes in 380 degrees oven or on your grill. FYI, charcoal grill adds an awesome flavor to this.
  • 5Garnish with chopped dill.
