Again, my very own recipe with a tropical influence. It rhymes very well with my coconut-flavored rice.

Ingredients

  • 1 tablespoon ground ginger
  • 1 tablespoon minced onion
  • 1/2 teaspoon boullion
  • 1 tablespoon basil paste or chopped fresh basil
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup coconut milk
  • 2 pounds boneless chicken breast (cut in 1inch squares)
  • 1 pound thinly sliced bacon
  • 1 tablespoon chopped fresh dill

How To Make spiced coconut grilled chicken

  • Step 1
    Blend ginger, onion, bouillon, basil paste or fresh basil, black pepper, and salt with coconut milk and set aside.
  • Step 2
    Cut the bacon into 3 pieces.
  • Step 3
    Wrap chicken with bacon and skew with a wooden skewer or metal skewer if you decide to grill on open fire.
  • Step 4
    Dredge the chicken in the coconut mixture and allow to soak the juices for about 30 minutes.
  • Step 5
    Grill for about 20 minutes in 380 degrees oven or on your grill. FYI, charcoal grill adds an awesome flavor to this.
  • Step 6
    Garnish with chopped dill.
