Ingredients

  • 1 lime, zested and juiced
  • 1 tablespoon ancho chile powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 3 1/2 pound roasting chicken
  • 3 sweet potatoes, peeled and quartered
  • olive oil

How To Make spice-rubbed roasted chicken with sweet potatoes

  • Step 1
    Preheat oven to 375 degrees F. Use a rack in a 9 x 13 roasting pan - spray rack with cooking spray.
  • Step 2
    Zest the lime and cut it in half and squeeze 1 tbsp. juice. Set lime halves aside.
  • Step 3
    Combine the lime zest, juice, chile powder, paprika, oregano, garlic and 1/2 teaspoon salt. Mix in a bowl until a paste forms.
  • Step 4
    Loosen the skin on the chicken breasts and thighs and rub paste under the skin. Place the lime halves in the chicken cavity. Tuck the wings under the chicken and tie the legs together. Place the chicken breast side up in the roasting pan.
  • Step 5
    Cut up sweet potatoes into quarters and toss with olive oil and a little ancho chile powder, paprika and salt. Scatter the sweet potatoes around the chicken in the roasting pan.
  • Step 6
    Bake approximately 1 hour and 10 minutes or until chicken is done. Remove from the oven and allow to rest 10 minutes.
  • Step 7
    Place chicken on a cutting board and remove the lime halves. Carve the chicken into serving pieces and serve with the sweet potatoes on the side.
