Ingredients
- 1 cup green bell pepper, chopped
- 1 cup onion, chopped
- 1 can 8-oz. sliced mushrooms
- 1 1/2 cups chicken broth, low salt
- 2 cups chicken breasts, chopped
- 1 can 16-oz. whole tomatoes, drained
- 2 tablespoons vegetable oil
- 2 1/2 tablespoons cornstarch
- 3 tablespoons soy sauce, low sodium
How To Make special chicken and rice

Step 1In a large deep skillet cook green peppers and onions in oil over low heat until tender.

Step 2Mix small amount of chicken broth with the cornstarch and add to vegetables in skillet. Add remaining broth and soy sauce. Stir in the chicken, and stir constantly until clear and thickened. Add tomatoes and mushrooms. Heat through. Serve over white rice.
