Ingredients

  • 3 tablespoons butter
  • 1 cup mushrooms, freshly sliced
  • 1/3 cup leeks, chopped
  • 1/4 cup celery, chopped
  • 3 tablespoons red bell pepper, chopped
  • 3 tablespoons parsley, fresh and chopped
  • 2 cups spaghetti squash, cooked
  • 4 - chicken breasts, boneles and cut in 1/2" strips
  • 1/4 cup croutons, seasoned and crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon seasoned pepper
  • 5/8 teaspoon garlic powder
  • pinch summer savory, dried
  • 1/2 cup sour cream
  • 2 ounces swiss cheese, shredded

How To Make spaghetti squash and chicken skillet casserole

  • Step 1
    Melt butter in a large skillet over medium heat; add mushrooms and next 4 ingredients, then cook, stirring constantly for 5 minutes or until tender.
  • Step 2
    Add spaghetti squash and next 6 ingredients, cook 4 minutes, stirring constantly.
  • Step 3
    Stir in sour cream, cook, stirring constantly, just until thoroughly heated; remove from heat.
  • Step 4
    Sprinkle with cheese; cover and let stand for 1 minute.
  • Step 5
    To bake, prepare mixture according to directions and spoon into a lightly greased 1.5 quart casserole dish.
  • Step 6
    Cover and bake at 350 for 20-25 minutes.
