Ingredients
- 3 tablespoons butter
- 1 cup mushrooms, freshly sliced
- 1/3 cup leeks, chopped
- 1/4 cup celery, chopped
- 3 tablespoons red bell pepper, chopped
- 3 tablespoons parsley, fresh and chopped
- 2 cups spaghetti squash, cooked
- 4 - chicken breasts, boneles and cut in 1/2" strips
- 1/4 cup croutons, seasoned and crushed
- 1/4 teaspoon salt
- 1/4 teaspoon seasoned pepper
- 5/8 teaspoon garlic powder
- pinch summer savory, dried
- 1/2 cup sour cream
- 2 ounces swiss cheese, shredded
How To Make spaghetti squash and chicken skillet casserole

Step 1Melt butter in a large skillet over medium heat; add mushrooms and next 4 ingredients, then cook, stirring constantly for 5 minutes or until tender.

Step 2Add spaghetti squash and next 6 ingredients, cook 4 minutes, stirring constantly.

Step 3Stir in sour cream, cook, stirring constantly, just until thoroughly heated; remove from heat.

Step 4Sprinkle with cheese; cover and let stand for 1 minute.

Step 5To bake, prepare mixture according to directions and spoon into a lightly greased 1.5 quart casserole dish.

Step 6Cover and bake at 350 for 20-25 minutes.
