FROM HELEN'S PANTRY Right now would be a good time to make this soup. It is a good soup that can be frozen and used when the weather starts to get chili. Grill the chicken Then make the soup.

Ingredients

  • SOUTHWESTERN GRILLED CHICKEN SOUP
  • 12 TO 14 ounces grilled chicken
  • 1/2 - green pepper, diced
  • 1/2 - red pepper, diced
  • 1 - whole onion, diced
  • 1 cup corn
  • 2 cans diced tomatoes
  • 1 cup cooked rice
  • 1- 48 ounces can tomato juice
  • 1 can black beans
  • 3 tablespoons chili powder
  • - salt pepper & garlic to taste

  • Step 1
    Season chicken with salt, pepper, and garlic then grill until chicken is completely cooked, dice into cubes
  • Step 2
    Simmer tomato juice, add onions, peppers, tomatoes, corn, seasonings simmer for approximately 35 to 45 minutes.
  • Step 3
    Add already cooked rice and chicken during the last 10 minutes of cooking.
  • Step 4
    Serve with cornbread , jalapeno peppers and sour cream.
