Ingredients

  • 4 ounces 6 skinless bone-in chicken breast
  • 2 large eggs
  • 1/4 cup non fat or soy milk
  • 1/2 cup finely chopped pecans
  • 1/3 cup cornmeal
  • 1/3 cup whole wheat, oat or soy flour
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon fresh ground pepper
  • 1 tablespoon smart balance buttery spread, slivered into thin slices

How To Make southern oven fried chicken

  • Step 1
    Preheat oven to 425 with the rack in the center. Line a 9x13 inch deep baking dish with heavy aluminum foil.
  • Step 2
    In a wide bowl whisk the eggs and milk.
  • Step 3
    In a shallow bowl, stir together the pecans, cornmeal, flour, salt, onion powder, cayenne, and pepper.
  • Step 4
    Rinse chicken under cold water and pat dry with a paper towel. Dip the chicken breast into the egg mixture and then dredge them in the pecan mixture.
  • Step 5
    Place the chicken in the baking dish. Dot each coated breast with the Smart Balance and bake until golden brown...approximately 40 minutes
  • Step 6
    For a complete meal add mashed potatoes and broccoli.
