Ingredients
- 4 ounces 6 skinless bone-in chicken breast
- 2 large eggs
- 1/4 cup non fat or soy milk
- 1/2 cup finely chopped pecans
- 1/3 cup cornmeal
- 1/3 cup whole wheat, oat or soy flour
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon fresh ground pepper
- 1 tablespoon smart balance buttery spread, slivered into thin slices
How To Make southern oven fried chicken

Step 1Preheat oven to 425 with the rack in the center. Line a 9x13 inch deep baking dish with heavy aluminum foil.

Step 2In a wide bowl whisk the eggs and milk.

Step 3In a shallow bowl, stir together the pecans, cornmeal, flour, salt, onion powder, cayenne, and pepper.

Step 4Rinse chicken under cold water and pat dry with a paper towel. Dip the chicken breast into the egg mixture and then dredge them in the pecan mixture.

Step 5Place the chicken in the baking dish. Dot each coated breast with the Smart Balance and bake until golden brown...approximately 40 minutes

Step 6For a complete meal add mashed potatoes and broccoli.
