slow cooker turkey or chicken and corn enchadilla

I love Enchiladas but i hate all the mess and several ingredients. So I made a couple change to a dish from Schwan's...This is a must try for all those that want the Mexican Favor but not all the preparation.. A note: you can make this vegetarian , just by omitting the meat , and use sot sour cream, soy cheese. And add veggies of your choice..

Ingredients
- 1 can 10.75 oz cream of chicken soup or veg consomme
- 1 can 10 oz red enchilada sauce
- 8 ounces sour cream or soy cream
- 1 can chopped green chilies
- 1/2 cup diced chicken breast or turkey or (veggies of your choice)
- 2 cups mexican style sweet corn
- 12 - corn tortilla, cut into quarters
- 2 cups mexican blend shredded cheese or soy cheese
- 1/4 cup sliced green onion
How To Make slow cooker turkey or chicken and corn enchadilla

Step 1Stir together the soup , sour cream and green chilies.

Step 2Fold chicken and corn into the soup and sour cream mixture.

Step 3Pour half a can of enchiladas sauce on bottom of a med slow cooker , arrange half of the cut tortilla pieces over sauce.

Step 4Spread half of chicken mixture over cut tortilla and enchilada sauce and top with half cheese.

Step 5Repeat layer, starting with remaining sauce and tortillas.

Step 6Cook on low for 4-6 hours.
