This slow cooker chicken is great over steamed rice and a nice Korean vegetable dish.

Ingredients For slow cooker stewed chicken

  • 3 lb
    chicken thighs, bone-in
  • 1 lb
    small potatoes (red preferred), cut into chunks
  • 2
    carrots, cut diagonally into large pieces
  • 1/2 lg
    onion, cut into chunks
  • 4 clove
    garlic, roughly chopped
  • ginger, 1/2 inch cut in thin slices
  • 3
    green onions cut diagonally - 2 " pieces
  • 1/4 tsp
    red pepper flakes (optional)
  • 1 Tbsp
    sugar
  • 4 Tbsp
    soy sauce or tamari
  • 2 Tbsp
    rice wine or mirin
  • 1 Tbsp
    honey
  • 2 Tbsp
    gochujang
  • 1 Tbsp
    sesame oil
  • 1 tsp
    sesame seeds
  • black pepper

How To Make slow cooker stewed chicken

  • 1
    Place the vegetables (excluding the green onion) in the slow cooker along with the chicken (trimmed of excess fat).
  • 2
    Mix the sauce ingredients (excluding the sesame oil and sesame seeds) and stir well. Pour sauce over the chicken.

    Cook on low setting for 6 hours. When done, skim off excess fat and add the sesame oil and sesame seeds.

    Serve with steamed rice.
