If you are lucky enough to have plum trees, this is a great recipe to use them in. I have found I enjoy fruit quite often on the grill, with chicken or fish.

Ingredients

  • 4 large boneless skinless chicken breasts
  • 2/3 cup water
  • 1/4 cup soy sauce
  • 1/4 cup dry sherry
  • 2 tablespoons sugar
  • 1 tablespoon fresh ginger, peeled and grated
  • 2 teaspoons cornstarch
  • 4 - 10-inch wooden skewers
  • 6 - fresh plums, halved and pitted

How To Make skewered chicken and plums

  • Step 1
    Cut the chicken into 1/2 inch strips. Place in a large shallow dish or large ziplock bag. Set aside.
  • Step 2
    Combine the water, soy sauce, sherry, sugar, minced ginger, and cornstarch in a small saucepan. Cook over medium heat until the mixture is slightly thickened, stirring occasionally. Let cool.
  • Step 3
    Pour the water mixture over the chicken and marinate for 1 hour in the refrigerator.
  • Step 4
    Meanwhile, soak the wooden skewers in water for at least 30 minutes so they do not burn on the grill.
  • Step 5
    Remove the chicken from the marinade, reserving the marinade. Alternate the chicken strips and plum halves on the skewer.
  • Step 6
    Grill, uncovered over medium-high coals (350 to 400 degrees) for 8 to 10 minutes, or until the chicken is done, turning once. Baste with the reserved marinade up to 4 minutes before chicken is done.
