skewered chicken and plums
If you are lucky enough to have plum trees, this is a great recipe to use them in. I have found I enjoy fruit quite often on the grill, with chicken or fish.

Ingredients
- 4 large boneless skinless chicken breasts
- 2/3 cup water
- 1/4 cup soy sauce
- 1/4 cup dry sherry
- 2 tablespoons sugar
- 1 tablespoon fresh ginger, peeled and grated
- 2 teaspoons cornstarch
- 4 - 10-inch wooden skewers
- 6 - fresh plums, halved and pitted
How To Make skewered chicken and plums

Step 1Cut the chicken into 1/2 inch strips. Place in a large shallow dish or large ziplock bag. Set aside.

Step 2Combine the water, soy sauce, sherry, sugar, minced ginger, and cornstarch in a small saucepan. Cook over medium heat until the mixture is slightly thickened, stirring occasionally. Let cool.

Step 3Pour the water mixture over the chicken and marinate for 1 hour in the refrigerator.

Step 4Meanwhile, soak the wooden skewers in water for at least 30 minutes so they do not burn on the grill.

Step 5Remove the chicken from the marinade, reserving the marinade. Alternate the chicken strips and plum halves on the skewer.

Step 6Grill, uncovered over medium-high coals (350 to 400 degrees) for 8 to 10 minutes, or until the chicken is done, turning once. Baste with the reserved marinade up to 4 minutes before chicken is done.
