I got the original recipe years ago from a friend and mad it lighter in calories and fat. It's very easy to make and my hubby loves it! That's good enough for me.

Ingredients

  • 1 - 16 oz pkg reduced fat ritz crackers, crushed
  • 1-1/2 stick melted butter
  • 2 cups cooked, chopped chicken breasts
  • 1 - 8 oz pkg frozen peas
  • 1 can fat free cream of mushroom soup
  • 1 can fat free cream of chicken soup
  • 1 cup light sour cream
  • 1/2 cup water
  • 1 teaspoon dried basil
  • 1 teaspoon minced garlic
  • 1/8 teaspoon pepper

How To Make simply light creamy chicken casserole

  • Step 1
    Heat oven to 325. Spray a 9" x 13" baking dish w/ cooking spray. In lg bowl, combine crushed crackers and butter, mix well.
  • Step 2
    Set aside 1/3 cup cracker mix. Spoon remaining cracker mix into bottom of baking dish. Evenly place chicken over crackers. Sprinkle chicken w/ peas.
  • Step 3
    In another bowl, combine soups, sour cream, water, garlic, basil and pepper, mix well. Pour mix over chicken mix. Sprinkle w/ reserved cracker mix. Bake 1 hr, or until bubbly.
