I got the original recipe years ago from a friend and mad it lighter in calories and fat. It's very easy to make and my hubby loves it! That's good enough for me.

16 oz pkg reduced fat ritz crackers, crushed
1-1/2 stick
melted butter
2 c
cooked, chopped chicken breasts
8 oz pkg frozen peas
1 can(s)
fat free cream of mushroom soup
1 can(s)
fat free cream of chicken soup
1 c
light sour cream
1/2 c
1 tsp
dried basil
1 tsp
minced garlic
1/8 tsp

How to Make Simply light creamy chicken casserole


  • 1Heat oven to 325. Spray a 9" x 13" baking dish w/ cooking spray. In lg bowl, combine crushed crackers and butter, mix well.
  • 2Set aside 1/3 cup cracker mix. Spoon remaining cracker mix into bottom of baking dish. Evenly place chicken over crackers. Sprinkle chicken w/ peas.
  • 3In another bowl, combine soups, sour cream, water, garlic, basil and pepper, mix well. Pour mix over chicken mix. Sprinkle w/ reserved cracker mix. Bake 1 hr, or until bubbly.
