This is another of grandma's dishes. It doesn't get any easier than this; quick to make with excellent results. The flavorful chicken is crispy on the outside and tender and juicy inside. If you try it, you will not be disappointed.

Ingredients
- 1 cup cracker crumbs (Ritz or preferred crackers)
- 1/4 cup Parmesan cheese, finely grated
- 1/2 teaspoon dry mustard
- 2 cloves garlic, finely chopped
- 1 shallot, finely chopped
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon sweet paprika
- 1/4 - 1/2 teaspoon cayenne pepper, more if you like heat
- 1 whole chicken, cut up into 8 pieces
- 1/4 cup vegetable oil
How To Make simple simon chicken

Step 1Preheat your oven to 375°F. Cover a baking sheet with tinfoil for easy cleanup.

Step 2In a large bowl, add the following ingredients and mix well; cracker crumbs, Parmesan cheese, dry mustard, garlic, shallot, salt, paprika and cayenne pepper.

Step 3Lightly brush the chicken with oil and roll in the cracker mixture, coating well.

Step 4Place on prepared pan and bake at for 1 hour or until done. Equally good served cold as it is hot.
