- 2 cups sourdough pretzel nuggets
- 1/2 cup all purpose flour
- 2 - eggs
- 1/4 cup buttermilk
- 2 cloves garlic, minced
- 1/8 teaspoon pepper
- 5 tablespoons olive oil, divided
- 4 - boneless, skinless, chicken breast halves (5 oz. ea.)
- 2/3 cup mayonnaise
- 2 tablespoons dijon mustard
- 2 teaspoons cider vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper

Step 1Place the pretzels in a food processor and process until finely crushed. Place pretzels and flour in separate shallow bowls. In a third shallow bowl, whisk the eggs, buttermilk, garlic and pepper.

Step 2Pound chicken with a meat mallet to 1/4-inch thickness. Dip both sides of chicken in flour, then egg mixture, and then in pretzel crumbs.

Step 3In a large skillet, heat 3 Tbsp. oil over medium heat. Add the chicken. Cook for about 15 minutes on each side or until no longer pink.

Step 4While chicken is cooking: in a small bowl, mix the mayonnaise and mustard. Whisk in remaining oil, vinegar, salt and pepper.

Step 5Serve chicken with mayonnaise mixture spooned over the top. If having a salad, spoon some over that as well.
