Ingredients

  • 2 cups sourdough pretzel nuggets
  • 1/2 cup all purpose flour
  • 2 - eggs
  • 1/4 cup buttermilk
  • 2 cloves garlic, minced
  • 1/8 teaspoon pepper
  • 5 tablespoons olive oil, divided
  • 4 - boneless, skinless, chicken breast halves (5 oz. ea.)
  • 2/3 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 2 teaspoons cider vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

How To Make secret crunch chicken

  • Step 1
    Place the pretzels in a food processor and process until finely crushed. Place pretzels and flour in separate shallow bowls. In a third shallow bowl, whisk the eggs, buttermilk, garlic and pepper.
  • Step 2
    Pound chicken with a meat mallet to 1/4-inch thickness. Dip both sides of chicken in flour, then egg mixture, and then in pretzel crumbs.
  • Step 3
    In a large skillet, heat 3 Tbsp. oil over medium heat. Add the chicken. Cook for about 15 minutes on each side or until no longer pink.
  • Step 4
    While chicken is cooking: in a small bowl, mix the mayonnaise and mustard. Whisk in remaining oil, vinegar, salt and pepper.
  • Step 5
    Serve chicken with mayonnaise mixture spooned over the top. If having a salad, spoon some over that as well.
