Ingredients

  • 4 - chicken breasts, skin on
  • 1 - lemon
  • 1-2 clove garlic,sliced
  • 1 pinch dried sage
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon rosemary, dried
  • 1/2 teaspoon thyme, dried
  • 4 dashes salt and pepper

How To Make scarborough chicken

  • Step 1
    Preheat oven to 400 degrees. Loosen the skin on the chicken breasts. Slide some of the sliced garlic clove under the skin of each chicken breast. Place the chicken in the baking pan.
  • Step 2
    Slice the lemon in half and squeeze the juice over the chicken. Sprinkle the remaining garlic and herbs over the chicken. Don't forget the salt and pepper.
  • Step 3
    Bake for 30 minutes. Remove from the oven, let rest 5 minutes. Serves 4. If you use the split chicken breasts, allow extra baking time.
  • Step 4
    Notes: you can add sliced mushrooms or onions if you'd like. If you want the chicken to cook quicker, you can pound the breasts to flatten them. If you use a skinless chicken breast for this recipe, I recommend covering the baking pan to seal in the juices. Enjoy!
