savory chicken in a crock pot

I use the largest chicken breasts for this that I can find, so that they fill up the crock pot. Don't overcook, or you will have shredded chicken instead of chicken breasts.

Ingredients

  • 6 large boneless chicken breast halves
  • 2 tablespoons fresh oregano, chopped
  • 1/4 teaspoon black pepper, fresh ground
  • 3 tablespoons butter
  • 1 cup chicken stock
  • 1/4 cup white wine
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh parsley

How To Make savory chicken in a crock pot

  • Step 1
    Pat chicken dry with paper towels. Combine oregano and pepper and rub over chicken. In a skillet over medium heat, brown the chicken breasts on each side in the butter. Transfer chicken to slow cooker.
  • Step 2
    Add broth, wine, lemon juice, and garlic to skillet and bring to a boil while stirring. Pour over chicken. Cover and cook on low power for 5 hours. Sprinkle with the parsley and cook an additional 15 minutes. Chicken should reach an internal temperature of 165°.
  • Step 3
    We like this served with rice pilaf or one of the Italian risotto dishes, and fresh asparagus or broccoli.
