This recipe uses a method of cooking I call "steam-fry". It is cooked in the marinade so the chicken is infused with flavor. Healthy too!

Ingredients

  • 1/2 cup chicken broth
  • 1/4 cup fresh lime juice
  • 1 tablespoon sugar
  • 1 tablespoon chili powder
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons dijon mustard
  • 1 pound chicken breast halves, skinned and boned (4-4 ounce breast halves)
  • 1 teaspoon fresh cilantro, chopped

How To Make santa fe chicken

  • Step 1
    Combine the first 9 ingredients in a shallow dish or storage bag; add the chicken. Cover and marinate in the refrigerator up to 30 minutes.
  • Step 2
    Place the chicken and marinade in a large nonstick skillet; bring the marinade to a boil.
  • Step 3
    Reduce heat and simmer, uncovered, foro 5 to 6 minutes or until the chicken is done. Sprinkle with chopped ciilantro.
