This recipe uses a method of cooking I call "steam-fry". It is cooked in the marinade so the chicken is infused with flavor. Healthy too!

Ingredients

  • 1/2 c
    chicken broth
  • 1/4 c
    fresh lime juice
  • 1 Tbsp
    sugar
  • 1 Tbsp
    chili powder
  • 1 Tbsp
    vegetable oil
  • 1 tsp
    garlic powder
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 2 tsp
    dijon mustard
  • 1 lb
    chicken breast halves, skinned and boned (4-4 ounce breast halves)
  • 1 tsp
    fresh cilantro, chopped

How to Make Santa Fe Chicken

Step-by-Step

  1. Combine the first 9 ingredients in a shallow dish or storage bag; add the chicken. Cover and marinate in the refrigerator up to 30 minutes.
  2. Place the chicken and marinade in a large nonstick skillet; bring the marinade to a boil.
  3. Reduce heat and simmer, uncovered, foro 5 to 6 minutes or until the chicken is done. Sprinkle with chopped ciilantro.
