sam's chicken gumbo

No two gumbos are ever the same! But when there's a recipe to follow it can get pretty close sometimes... ;) This recipe is also from my grandmother-in-law.

Ingredients
- 8 - chicken thighs, skinless and boneless
- 2 links - sausage, smoked, all meat
- 3 small onions, chopped
- 2 stalks celery, chopped
- 1 can cream of chicken soup
- 1/2 - green bell pepper, chopped
- 1/2 teaspoon ground thyme
- - dry roux mix
- 1 cup okra, chopped or sliced
- - salt to taste
- - black pepper to taste
- - extra chicken broth (optional)
How To Make sam's chicken gumbo

Step 1Boil chicken with 1/2 of the onions, celery and bell pepper.

Step 2When almost done, remove chicken from broth and cut into bite-sized pieces.

Step 3Slice sausage and brown.

Step 4When sausage is browned, all remaining onions, celery and bell pepper; saute'.

Step 5Add chicken and stir to blend flavors, then put everything back into the broth and add thyme.

Step 6Cook long enough for flavors to thoroughly blend. Add roux mix to thicken to taste.

Step 7Add okra at the end, just long enough for it to get tender.

Step 8If desired add extra broth.

Step 9Serve over rice.
