Ever have half a rotisserie chicken left over and wonder what to do with it? This is a wonderful option.

Ingredients

  • 1 package fresh brocolli/cauliflour, 12 oz
  • 3 cups leftover, rottiserie chicken, bite size pieces
  • - salt and pepper, to taste
  • SAUCE
  • 3 tablespoons mayonaise
  • 1/4 cup half and half milk
  • 1/4 cup chicken broth
  • 1 teaspoon dry mustard
  • 1 cup sharp cheddar cheese
  • TOPPING
  • 1/2 cup panko bread crumbs
  • 1/4 cup olive oil

How To Make rotisserie chicken/cauliflour/brocolli bake

  • Step 1
    Pre-heat oven for 375 degrees. Steam the veggies for about 2 or 3 minutes, then place in the bottom of large casserole dish that's been sprayed with oil.
  • Step 2
    Layer the bite-size chicken over the veggies. Salt and pepper to taste.
  • Step 3
    In a large bowl, mix all of the sauce ingredients, including the cheese and pour evenly over the chicken. Mash down on the top to make sure the liquid is dispersed.
  • Step 4
    Sprinkle the top with panko bread crumbs and drizzle with a little olive oil. Bake for approximately 30 minutes.
