I try to make roasted chicken at least once a week. It's cheaper, because you almost always have left-overs you can use for other recipes. I like the mild orangy taste to this chicken. And it's VERY moist.

Ingredients
- 2 tablespoons orange juice
- 1 teaspoon orange zest, or peel
- 3 tablespoons chicken broth
- 3 tablespoons orange marmalade
- 5 teaspoons minced garlic
- 4 - celery stalks, chopped.
- 1 large red onion, cut into wedges.
- 1 pound small red potatoes, halved.
- 8 ounces baby carrots.
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons olive oil.
- 1 - 6 lb roasting chicken
How To Make roasted marmalade chicken

Step 1Heat oven to 350. In bowl, combine orange juice, orange peel, broth and marmalade, season w/ salt and pepper. In lg roasting pan, toss next 7 ingredients w/ oil Place chicen over veggies. Coat chicken w/ marmalade glaze. Roast chicken and veggies about 2 hrs, or until no longer pink inside.
