If you've never tried Cornish game hen, we suggest you do. They're delicious. Essentially it's a smaller chicken, that's tender and has a richer flavor than larger chickens. This is a great recipe for roasting Cornish hens. The flavors of rosemary and garlic permeate through the moist, juicy meat. Once roasted, the skin is perfectly crisp.

Ingredients

  • 2 - Cornish hens (rinsed and pat dry), split them in half
  • 6 cloves garlic, minced
  • 2 teaspoons rosemary, dried
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 tablespoons unsalted butter
  • 1 large roasting pan

How To Make roasted cornish hens

  • Cornish hens split in half.
    Step 1
    Pre-heat oven to 450 degrees. Split Cornish hens in half lengthwise. Rinse and pat dry with a paper towel; set aside.
  • Butter, minced garlic, rosemary, salt, and pepper mixed in a bowl.
    Step 2
    In a small bowl mix together butter, minced garlic, rosemary, salt, and pepper. This will look like a paste.
  • Butter rubbed under Cornish hens skin and placed in pan.
    Step 3
    Loosen the skin of the hens. Rub spice mixture under the skin. Arrange Cornish hens cut side down in the roasting pan.
  • Cornish hens baking in the oven.
    Step 4
    Place roasting pan in the oven at 450 degrees for 15 minutes. Then reduce heat to 350 degrees and continue baking for 40 minutes or until hens are no longer pink inside.
