An easy, healthy one-dish meal. I cut chicken breasts into tenders, but whole breasts would work.

Ingredients

  • 6 tablespoons olive oil
  • 2 - lemons, one thinly sliced, 1 juiced
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 pound trimmed green beans
  • 4 - small, red potatoes, quartered
  • 2 - chicken breasts

How To Make roasted chicken w/lemon-garlic beans and potatoes

  • Step 1
    Pre-heat oven to 450 degrees. Coat a large baking dish or cast-iron skillet with one tablespoon of olive oil. Arrange lemon slices on bottom.
  • Step 2
    In a large mixing bowl, combine the remaining oil, garlic, lemon juice salt and pepper. Add green beans to mixture and mix well. Using a slotted spoon, place green beans on top of lemon slices. Add potatoes to the oil mixture in bowl, coat well and place along the outside of the dish. Place chicken in remaining oil mixture and place on top of the beans. Pour any leftover oil mixture on top of chicken.
  • Step 3
    Roast for 50 minutes. Remove chicken and cook vegetables for 10 more minutes. Divide veggies evenly and add chicken.
