This is a fool proof go to recipe,always comes out perfectly. They say the measure of a good cook, is roasting a chicken, and making a perfect omelet. Well, one out of two ain't bad.

Ingredients

  • 3-4 pounds roasting chicken
  • 1 - lemon
  • 6 cloves roasted, or 3 cloves crushed
  • 1/2 - onion
  • 2 teaspoons onion,and garlic powder
  • 2 teaspoons paprika
  • 2 tablespoons olive oil

How To Make roast me a chicken baby!

  • Step 1
    Remove giblets, from chicken and pat dry. Slip your fingers under skin on breasts,and make a pocket.
  • Step 2
    Cut lemon into 4 thin slices,slip 2 under each skin of breast, along with 3 roasted garlic cloves,or scant minced. Rub olive oil over chicken, sprinkle,garlic powder, and onion powder,paprika,salt,pepper. Stuff 1/2 onion, and 1/2 the lemon in cavity.
  • Step 3
    Tie legs together with kitchen twine. Bake on rack,in a preheated oven 425,uncovered. 1hour 30 min. Remove from oven, let rest 10-15 min. lightly tented with foil.
