easy rice-a-roni chicken soup

Made a large amount of rice a roni one night and decided to do something different with the leftovers. This soup was so good I just had to write the recipe down.

Ingredients For easy rice-a-roni chicken soup

  • 1 box
    regular size rice a roni package cooked per package directions. use half the oil to brown the rice and noodles. and you don't have to use butter. olive oil works well.
  • 96 oz
    chicken broth i use swanson's or college inn low fat. this would be 2 48 oz packages. you can use any chicken flavored broth but watch the salt content.
  • 4
    sliced medium carrots
  • 4
    sliced celery ribs
  • 1-2 lb
    of cooked ddiced skinless chicken breast boiled until just done,in small amount of water on stove top. or use precooked. i used one package of market day precooked diced chicken tenders.
  • 1 tsp
    dried dill week
  • salt and pepper to taste

How To Make easy rice-a-roni chicken soup

    Put broth, dill and uncooked vegetables in large pot. Bring to boil and simmer for 1/2 hour until veggies are tender.

    Add rice a roni and Chicken. Bring to a boil. Turn off the heat and enjoy this tastey soup!!
