Wanted to make a chicken alfredo bake but needed to use up some ranch dressing and didnt feel like making the biscuits for the bake, resulting in this variation. My fiance and our friend called it "chicken ambrosia". Truly delicious and super quick and easy!

Ingredients

  • 1 1/2 pounds chicken breasts, boneless and skinless, cut into chunks
  • 1 medium yellow onion, diced
  • 8 ounces cream(sour cream or mexican crema)
  • 2 cups ranch dressing
  • 5 teaspoons parmesan cheese
  • 1 teaspoon parsley flakes
  • 1 teaspoon black pepper
  • 8 cups california vegetable medley

How To Make ranch chicken alfredo

  • Step 1
    Sautee onion until browned and carameled. To the same sautee pan add the chicken and ranch dressing. Simmer until chicken chunks are no longer pink but not quite fully cooked. Add cream, parmesan cheese, parsley, and black pepper.
  • Step 2
    Meanwhile steam the vegetables
  • Step 3
    Serve the ranch chicken alfredo over the vegetables
