quick chicken lo-mein

I love take-out lo-mein, so I tried a few ways to make it at home that would taste similar. This is what I came up with. It's so very yummy!

Ingredients

  • 10 ounces chicken breast, cut into small pieces
  • 2 teaspoons minced garlic from a bottle
  • 1 teaspoon cornstarch
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons asian duck sauce
  • 8 ounces thin spaghetti
  • 2 tablespoons peanut oil
  • 1 cup broccoli florets
  • 1 - carrot, thinly sliced on the bias
  • 1 - onion, thinly sliced
  • 1 cup shredded napa cabbage
  • 1 - chopped scallion for garnish
  • 1 tablespoon sesame seeds, for garnish

How To Make quick chicken lo-mein

  • Step 1
    Cook pasta as directed, drain. In bowl, stir together chicken, cornstarch, garlic and 1 tbsp soy sauce. Add chicken mix to lg skillet over medium heat. Add 1 tbsp oil, saute 5 mins. Remove chicken from pan.
  • Step 2
    Add 1 tbsp oil to skillet, add veggies, including cabbage. Saute 4 mins. Add chicken mix back to pan. Saute 2 mins.
  • Step 3
    Add spaghetti to skillet along w/ the duck sauce and remaining soy sauce. Saute, stirring for 3 min or until heated through.Garnish w/ chopped scallions and sesame seeds.
