A healthy, quick dinner made w/ fresh asparagus.

Ingredients

  • 10 ounces lo-mein noodles
  • 3 teaspoons dark sesame oil, divided
  • 10 ounces chicken breasts, boneless, skinless, cut into bite size pieces
  • 2 teaspoons plus 2 tbsp light soy sauce, divided
  • 1 teaspoon cornstarch
  • 1 teaspoon rice wine vinegar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon sugar
  • 2 tablespoons canola oil
  • 1 pound fresh asparagus, cut into 1" pieces
  • 3 1/2 ounces shiitake mushrooms, thinly sliced
  • 3 - scallions, thinly sliced

How To Make quick chicken/asparagus stir-fry

  • Step 1
    Cook noodles as directed, drain, toss w/ 1 tsp sesame oil, set aside. In lg bowl combine, chicken w/ 2 tsp soy sauce and cornstarch. In lg measuring cup, stir together 2 tsp sesame oil, 2 tbsp soy sauce, rice wine vinegar, ginger and sugar.
  • Step 2
    Heat wok or lg skiller over high heat. Add 1 tbsp oil. Add chicken mix and cook, stirring for about 4 mins. Remove chicken from skillet. Add remaining oil to pan. Add asparagus and cook 1-1/2 mins, stirring.
  • Step 3
    Add mushrooms and cook, stirring for 1-1/2 mins. Add scalliona and cook 1 min. Add chicken back to pan, then add sauce mix to pan. Stir to coat evenly. Add noodles, stir to coat. Cook, stirring until noodles are heated through.
