I love to make this on a day when I am too tired to make a full course meal. It is simple and delicious, my husband and grandchildren love when I make this, It is both appetizing to the pallet and full of vegetables and nutrition.

Ingredients
- 2 large fresh or frozen chicken breasts
- 1 tablespoon minced garlic
- 1 tablespoon sweet butter
- 1 tablespoon olive oil, extra virgin
- 1 can bamboo shoots
- 1 can water chestnuts
- 2 cups frozen broccoli
- 2 packages frozen oriental mixed vegetables
- 2 tablespoons apricot preserves
- 1 tablespoon soy sauce, dark
- 1/2 tablespoon regular sugar or splenda
- 1-2 package boil in bage rice

Step 1IN A LARGE SKILLET, ADD OLIVE OIL, BUTTER, AND GARLIC. LET THE BUTTER MELT AND SAUTE A BIT IN THE PAN, ON LOW TO MEDIUM HEAT, ADD THE CHICKEN BREAST AND SEAR ON BOTH SIDES, AND COOK IN PAN WITH A LID UNTIL THE CHICKEN IS COOKED THROUGH, REDUCE HEAT IF THE CHICKEN STARTS TO BROWN TO QUICKLY.AFTER YOU HAVE SEARED THE CHICKEN IN THE OIL, BUTTER, AND GARLIC AND IT IS DONE, REMOVE TO A PLATE OR BOWLTO COOL FOR CUTTING. CUT THE CHICKEN TO SLICES OR INTO CUBES, SET ASIDE UNTIL VEGETABLES ARE DONE.

Step 2WHILE YOU ARE DOING THE CHICKEN PREP YOUR OTHER INGREDIENTS, OPEN THE CANS AS NEEDED AND DRAIN ALL FLUIDS FROM CANNED ITEMS. ALSO START YOUR BOIL IN BAG RICE. THIS WILL TAKE ABOUT 10 MINUTES, ONCE DONE COOKING SET ASIDE. ONCE CHICKEN IS TAKEN OUT OF THE PAN, THEN ADD ALL INGREDIENTS TO THE PAN AND COVER FOR ABOUT 20 MINUTES UNTIL VEGETABLES BEGIN TO SOFTEN, DO THIS ON LOW TO MEDIUM LW HEAT.

Step 3PREPARE THE SOY SAUCE AND APRICOT PRESERVES AND 1/2 TBSP OF SUGAR MIX BOTH TOGETHER TO MAKE YOUR STIR FRY SAUCE. IF YOU LIKE MORE OF THE SAUCE YOU CAN DOUBLE THE INGEDIENTS AS NECESSARY.

Step 4ONCE THE VEGETABLES HAVE COOKED IN THE PAN TO YOUR LIKING ADD THE CHICKEN AND STIR TOGETHER, THEN ADD THE SAUCE OVER ALL THE INGREDIENTS. LET COOK ON LOW HEAT FOR ABOUT 10 MINUTES. TAKE COOKED RICE AND PLACE IN A BOWL ADD A LITTLE SWEET BUTTER OVER THE RICE THATS IT JUST SERVE OVER THE HOT RICE.
