Quick and Easy Companies Coming Spaghetti Sauce

Ever have a day when you had that someone extra coming for lunch or dinner and you didn't pull anything out of the freezer or even plan for a meal? That was me yesterday.

I didn't have any ground beef in the freezer but I did have a lb of ground chicken. Yes, I sure did cook it frozen. Add a little water to the pot and break it up as it cooks...works every time! I had a new 1-lb roll of Tennessee Pride sausage in the fridge. Everything else I needed was in the pantry.

1 lb
bulk pork sausage, hot or mild (your choice, i used tennessee pride-mild)
1 lb
ground chicken, turkey or beef
2 Tbsp
olive oil, extra virgin
1 c
chopped onion
1 c
chopped bell pepper
1 c
sliced mushrooms
3 clove
garlic, minced
1 tsp
oregano, dried
salt and pepper to taste
1 tsp
red pepper flakes, optional (i like a little heat in almost everything i eat)
1/2 tsp
everglades seasoning, all purpose
28-oz can spaghetti sauce, your choice
8-oz can tomato sauce
parmesan cheese
pasta, cooked


1Brown meat(s)with olive oil in a heavy 6-quart pot. Drain off any fat once meat is cooked.
2Add remaining ingredients and simmer for an hour.
3Serve over your favorite pasta, a tossed salad and garlic cheese toast.
