Ingredients

  • 1 tablespoon unsalted butter
  • 1 large yellow onion
  • 1 clove garlic, minced
  • 1/2 small green bell pepper
  • 1 medium stalk celery, choppedd fine
  • 2 tablespoons a. p. flour
  • 16 ounces crushed tomatoes
  • 8 ounces chicken broth
  • 1/4 teaspoon hot sauce
  • 1 cup thawed sliced okra, or more to taste
  • 1 1/2 cups cooked chicken, cubed
  • 1/2 teaspoon lemon juice

How To Make quick and easy chicken gumbo

  • Step 1
    In a large heavy saucepan over medium heat, melt butter. Add onion, garlic, bell pepper and celery. Saute for 5 minutes or until softened.
  • Step 2
    Blend in flour and cook, stirring for approx. 3 minutes. Slowly stir in tomatoes and broth and then add hot pepper sauce.
  • Step 3
    Bring to a boil until mixture thickens, about 3 minutes. Add thawed okra and return mixture to a boil - then reduce heat and simmer another 6 minutes. Add cooked chicken and stir until warmed; stirring occasionally. Stir in lemon juice and mix well -- serve over rice.
