Ingredients
- 1 tablespoon unsalted butter
- 1 large yellow onion
- 1 clove garlic, minced
- 1/2 small green bell pepper
- 1 medium stalk celery, choppedd fine
- 2 tablespoons a. p. flour
- 16 ounces crushed tomatoes
- 8 ounces chicken broth
- 1/4 teaspoon hot sauce
- 1 cup thawed sliced okra, or more to taste
- 1 1/2 cups cooked chicken, cubed
- 1/2 teaspoon lemon juice
How To Make quick and easy chicken gumbo

Step 1In a large heavy saucepan over medium heat, melt butter. Add onion, garlic, bell pepper and celery. Saute for 5 minutes or until softened.

Step 2Blend in flour and cook, stirring for approx. 3 minutes. Slowly stir in tomatoes and broth and then add hot pepper sauce.

Step 3Bring to a boil until mixture thickens, about 3 minutes. Add thawed okra and return mixture to a boil - then reduce heat and simmer another 6 minutes. Add cooked chicken and stir until warmed; stirring occasionally. Stir in lemon juice and mix well -- serve over rice.
