Ingredients
- 4 slices bacon, cut into 1/2 inch pieces
- 6 - bone-in, skinless chicken thighs
- 3/4 teaspoon dried thyme, crushed
- 1 large onion, coarsely chopped
- 4 cloves garlic, minced
- 1/2 pound small red potatoes, halved or quartered depending upon size
- 10 - mushrooms, quartered
- 1 can 14.5 oz. can italian-flavored stewed tomatoes
- 1 1/2 cups dry red wine
How To Make quick and easy coq au vin

Step 1In a 4-qt. stockpot, cook bacon until browned, but not fully cooked. Meanwhile, sprinkle chicken with thyme, salt and pepper.

Step 2Brown chicken over medium high heat in olive oil. Remove chicken and bacon to a plate and add the onion - saute until tender and translucent. Add garlic and cook approx. 1 minute.

Step 3Add potatoes, mushrooms, tomatoes and wine. Add bacon and nestle chicken pieces in sauce . Cook uncovered for approx. 25 minutes or until chicken is cooked through, potatoes are tender and sauce has thickened, stirring occasionally.

Step 4Garnish with chopped parsley, if desired.
