Quick and Easy Coq Au Vin

4 slicebacon, cut into 1/2 inch pieces
6bone-in, skinless chicken thighs
3/4 tspdried thyme, crushed
1 largeonion, coarsely chopped
4 clovegarlic, minced
1/2 lbsmall red potatoes, halved or quartered depending upon size
1 can(s)14.5 oz. can italian-flavored stewed tomatoes
1 1/2 cdry red wine
How to Make Quick and Easy Coq Au Vin
- In a 4-qt. stockpot, cook bacon until browned, but not fully cooked. Meanwhile, sprinkle chicken with thyme, salt and pepper.
- Brown chicken over medium high heat in olive oil. Remove chicken and bacon to a plate and add the onion - saute until tender and translucent. Add garlic and cook approx. 1 minute.
- Add potatoes, mushrooms, tomatoes and wine. Add bacon and nestle chicken pieces in sauce . Cook uncovered for approx. 25 minutes or until chicken is cooked through, potatoes are tender and sauce has thickened, stirring occasionally.
- Garnish with chopped parsley, if desired.
