Ingredients

  • 4 slices bacon, cut into 1/2 inch pieces
  • 6 - bone-in, skinless chicken thighs
  • 3/4 teaspoon dried thyme, crushed
  • 1 large onion, coarsely chopped
  • 4 cloves garlic, minced
  • 1/2 pound small red potatoes, halved or quartered depending upon size
  • 10 - mushrooms, quartered
  • 1 can 14.5 oz. can italian-flavored stewed tomatoes
  • 1 1/2 cups dry red wine

How To Make quick and easy coq au vin

  • Step 1
    In a 4-qt. stockpot, cook bacon until browned, but not fully cooked. Meanwhile, sprinkle chicken with thyme, salt and pepper.
  • Step 2
    Brown chicken over medium high heat in olive oil. Remove chicken and bacon to a plate and add the onion - saute until tender and translucent. Add garlic and cook approx. 1 minute.
  • Step 3
    Add potatoes, mushrooms, tomatoes and wine. Add bacon and nestle chicken pieces in sauce . Cook uncovered for approx. 25 minutes or until chicken is cooked through, potatoes are tender and sauce has thickened, stirring occasionally.
  • Step 4
    Garnish with chopped parsley, if desired.
