quartered cafe-style barbecue chicken
I like this recipe in the hot summer months because most of the cooking is done inside instead of outside in the hot summer sun! I have the butcher at my grocery store quarter my chickens for me....he does it at no charge and just makes my prep time less and easier!

Ingredients
- 3 - 2 1/2 pound broiler/fryers, quartered
- 1 teaspoon pickling spice
- 2 cans tomato sauce (15 ounce cans)
- 1 cup ketchup
- 1/4 cup brown sugar, firmly packed
- 1/4 cup finely chopped onion
- 1/4 cup red wine vinegar
- 2 tablespoons white vinegar
- 2 tablespoons lemon juice
- 1 1/2 teaspoons ground red pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon celery seed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1 - bay leaf
How To Make quartered cafe-style barbecue chicken

Step 1Place the chicken, skin side up, in 2 ungreased 13 x 9 x 2 inch baking dishes. Bake, uncovered, at 350° for 45 minutes or until the chicken is lightly browned. Drain and set aside.

Step 2Tie the pickling spices in a piece of cheesecloth. Combine the pickling spice bag, tomato sauce, and remaining ingredients in a large saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes, stirring frequently. Remove and discard the pickling spice bag and bay leaf. Reserve half of the sauce to serve with the chicken.

Step 3Place the chicken, skin side up, on a grill rack. Brush the chicken with the remaining half of the sauce. Grill, covered, over medium-hot coals (350° to 400°) for 5 to 10 minutes on each side or until the chicken is done, basting occasionally. Serve the chicken with the reserved half of sauce.
