poultry essentials: yummy flavorful baked chicken
This is a great way to bake a really flavorful, juicy chicken. I saw a recipe that coated the bird in mayonnaise, and I thought I could do better than that. After 3 tries, I came up with this. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- THE CHICKEN AND BRINE
- 3 - 4 pounds whole chicken
- 1 medium orange, cut into quarters
- 2 - 3 quarts filtered cold water
- 3 tablespoons salt, kosher variety, fine grind
- THE SAUCE
- 3 tablespoons mayonnaise, plain variety
- 1 tablespoon smooth brown mustard, i prefer grey poupon
- 1/4 teaspoon salt, kosher variety, fine grind
- 1/4 teaspoon white pepper, freshly ground
- 1/4 teaspoon paprika, smoked, if you have some

Step 1PREP/PREPARE

Step 2Gather your ingredients (mise en place).

Step 3Dissolve the salt in the water, add the chicken, and allow to brine in the fridge for 2 hours, but no longer than 3.

Step 4While the chicken is brining, mix together the ingredients for the sauce.

Step 5Place a rack in the bottom position and preheat the oven to 350f (175c).

Step 6Remove from the brine, rinse, and place on a rimmed, parchment-lined baking sheet, fitted with a wire rack.

Step 7Coat the inside of the bird with 1 tablespoon of the sauce and add the orange quarters. Then rub the remainder of the sauce on the outside of the chicken.

Step 8Place into the preheated oven, and cook until the juices run clear, or an instant-read thermometer shows 185f (85c), about 1 to 1 1/2 hours.

Step 10Serve whole and carve at the table or cut up and serve with your favorite sides on individual plates. Enjoy.
