potato crisped chicken tenders

I wanted "fried" chicken last night, but didn't want to use so much oil, so i came up with this idea, which i've used to coat potato pancakes before. I also used them last night for flaky wedge fries to go along with (i'll post that as well). They both turned out so good i decided to share. Served with a green salad and ranch dressing, which came in handy to dip as well. =^.~=

Ingredients

  • 1 package chicken tender strips (raw)
  • - seasonings (onion and garlic powder, seasoned pepper)
  • 2 cups instant mashed potato flakes
  • - cooking spray
  • 2 tablespoons oil for browning

How To Make potato crisped chicken tenders

  • Step 1
    Set oven to 400. Spray frying pan and put in one tbsp oil. Turn heat on high to get started.
  • Step 2
    Open chicken and season while still in package. I don't bother to turn over as long as i can see all pieces. I season somewhat heavily since i use no salt, but be careful, it doesn't need a lot.
  • Step 3
    Put potato flakes in large bowl, dump chicken in and roll around to coat. May need to add more flakes depending on amount of chicken pieces.
  • Step 4
    Using tongs, pull out pieces and place in hot pan to brown. Turn over when golden. Turn burner down to medium high if it starts to smoke. May have to do this step in batches. Add 1 more tbsp oil for each batch.
  • Step 5
    Put in foil lined 9x13 pan that has also been sprayed with cooking spray.
  • Step 6
    Bake at 400 for 30 minutes.
