Ingredients
- - marinade sauce first.
- 1 tablespoon portuguese olive oil
- 2 cloves fresh garlic finely chopped
- 1 teaspoon dried basil
- pinch salt
- 12 teaspoons pepper(either red flakes or black pepper.)
- 4 ounces boneless skinless chicken (breast half cut into bite size pieces.)
- - rice as follows
- 2 tablespoons olive oil (divided)
- 2 tablespoons finely chopped garlic
- 1 large onion chopped
- 2 - jalapeno pepper(or red hot portuguese (fresh,seeded and chopped
- 2 - peeled tomato (seeded and coarsely chopped)
- 1 teaspoon turmeric,(powder)
- 1 cup white rice(uncooked)
- 1 large lime juice)
- 2 - bay leaves
- 1 cup chicken stock
- 12 cups water
- 3 tablespoons fresh chopped parseley
How To Make portuguese lime chicken rice

Step 1Mix olive oil, garlic, basil,salt and pepper in a small bowl.. TOSS chicken in marinade,cover and refrigerate overnight.

Step 2HEAT 1 tablespoon of olive oil,in a small saucepan over medium-high heat ;Cook chicken and set aside. Heat remaining 1 tablespoon of olive oil,and cook garlic and onion until translucent.

Step 3STIR in jalapeno,chopped tomatoes,and salt,and turmeric;Cook for 2 minutes to soften tomato. STIR in the rice ,mixing thoroughly . STIR in half of the lime juice,bay leaves, chicken stock, water ,and cooked chicken. BRING to a boil reduce heat to LOW,then cover and simmer 25 minutes,stirring occasionally untilthe rice has cooked. REMOVE from heat , discard the bay leaves; stir in the remaining lime juice and parsley

Step 4We all had extra limes for adding more juice to top it over rice and chicken WE all liked extra lime ,even add sliced lime on top of the dish, it looks very beautiful. Serve with a glass of white,wine goes very well. muito gosto (great taste)
