Portia is a dear friend of mine who owns 1 of the oldest Chinese restaurants in our city. I asked her how they make their popular and tasty Chinese red chicken. She finally gave me the recipe, only because as she said, " I don't care, I'm closing down soon, getting too old to run this place, so go ahead, make my special chicken. But you better name it after me." Hahaha...I'll miss her! But at least i got her special recipe!!

In a lg zip-lock plastic bag, mix together sugar, salt, 5-spice powder, white pepper, vinegar, molasses, sesame oil, 3 tbsp hoisin sauce, garlic powder and food coloring. Add chicken pieces to the bag.
refrigerate at least 2 days to really let the marinade soak into the chicken pieces. Turn bag over occasionally.
