Portia is a dear friend of mine who owns 1 of the oldest Chinese restaurants in our city. I asked her how they make their popular and tasty Chinese red chicken. She finally gave me the recipe, only because as she said, " I don't care, I'm closing down soon, getting too old to run this place, so go ahead, make my special chicken. But you better name it after me." Hahaha...I'll miss her! But at least i got her special recipe!!

Ingredients

  • 6 tablespoons sugar
  • 1 tablespoon salt
  • 1-1/2 teaspoon chinese 5-spice powder
  • 1 teaspoon white pepper
  • 3 tablespoons apple cider vinegar
  • 1-1/2 teaspoon light sesame oil
  • 3 tablespoons hoisin sauce
  • 1 tablespoon molasses
  • 2 teaspoons garlic powder
  • 1/2 teaspoon red food coloring
  • 6-8 pounds chicken pieces, drumsticks, thighs
  • 3 tablespoons oil, i used corn
  • 3 tablespoons honey
  • 3 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon teriyaki sauce

How To Make portia's special chinese chicken

  • Step 1
    In a lg zip-lock plastic bag, mix together sugar, salt, 5-spice powder, white pepper, vinegar, molasses, sesame oil, 3 tbsp hoisin sauce,garlic powder and food coloring. Add chicken pieces to the bag.
  • Step 2
    refrigerate at least 2 days to really let the marinade soak into the chicken pieces. Turn bag over occasionally.
  • Step 3
    In bowl stir together with a whisk, oil, honey, 3 tbsp hoisin sauce, soy sauce and teriyaki sauce. remove chicken from marinade, pour remaining marinade into bowl with oil, honey mix. Heat grill for medium. Cook chicken on grill, turning often to prevent burning. Baste every time you turn the chicken over. Make sure no pink is inside chicken and it's thoroughly cooked.
