Saw this recipe for fish fillets and thought I would like it better with chicken, so I have adapted it to fit my tastes.

Ingredients

pieces uncooked chicken breast tenders
1
egg, beaten
1/2 c
pistachios, finely chopped
1/3 c
dry bread crumbs
1/4 c
minced fresh parsley
1/4 tsp
salt
1/4 tsp
pepper
4 tsp
butter, melted

Step-By-Step

1Place the egg in a shallow bowl. Combine the pistachios, bread crumbs, parsley, salt and pepper in another shallow bowl.
2Dip the chicken tenders in the egg, then the pistachio mixture.
3Place the chicken on a baking sheet coated with cooking spray. Drizzle with butter. Bake in a preheated 425-degree oven for 20 minutes, turning once, until golden brown.
