1Prepare rice according to the package directions.
2Drain pineapple: reserve 2 tbsp of juice.
3Heat oil in a large skillet over med heat. Ass peppers , onon, and mushrooms: cook until vegetables are tender crisp. Remove vegetables from skillet: set aside.
4Cook chicken in same skillet until chicken is browned and cooked through.Add vegetable bck in skillet with sweet and sour sauce, soy sauce, pineapples and reservd juice. Heat through. Serve with hot cooked rice.
