This recipe is called Picnic Chicken because it is just as good cold as it is hot. So it's good to take on a picnic. We used to take this with us when we went boating.8 hours of the prep time is marinating time!

Ingredients

  • 8 ounces carton sour cream
  • 3 tablespoons lemon juice
  • 1 clove garlic, large, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon hot sauce
  • 2 -3 pound assorted chicken pieces, skinned
  • 2 cups saltine crackers, crushed
  • 2 teaspoons dry mustard
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1/4 teaspoon ground red pepper
  • 1/4 cup butter, melted

How To Make picnic chicken

  • Step 1
    Combine the first 6 ingredients in a small bowl; stir well.
  • Step 2
    Place the chicken in a large heavy-duty zip top plastic bag. Pour the marinade over the chicken and seal securely. Place the bag in the refrigerator and let marinate for 8 hours.
  • Step 3
    Combine the cracker crumbs, mustard, thyme, paprika, and red pepper in a medium bowl; sitr well.
  • Step 4
    Remove the chicken from the marinade. Dredge the chicken in the cracker crumb mixture. Place in a buttered 13 x 9 x 2 inch baking dish. Drizzle with the melted butter.
  • Step 5
    Bake, uncovered, at 375 degrees for 45 to 50 minutes or until the chicken is done.
