This recipe is called Picnic Chicken because it is just as good cold as it is hot. So it's good to take on a picnic. We used to take this with us when we went boating.8 hours of the prep time is marinating time!

  • 8 oz
    carton sour cream
  • 3 Tbsp
    lemon juice
  • 1 clove
    garlic, large, minced
  • 1/2 tsp
  • 1/4 tsp
    black pepper
  • 1/4 tsp
    hot sauce
  • 2 -3 lb
    assorted chicken pieces, skinned
  • 2 c
    saltine crackers, crushed
  • 2 tsp
    dry mustard
  • 2 tsp
    dried thyme
  • 1 tsp
  • 1/4 tsp
    ground red pepper
  • 1/4 c
    butter, melted

How to Make Picnic Chicken


  1. Combine the first 6 ingredients in a small bowl; stir well.
  2. Place the chicken in a large heavy-duty zip top plastic bag. Pour the marinade over the chicken and seal securely. Place the bag in the refrigerator and let marinate for 8 hours.
  3. Combine the cracker crumbs, mustard, thyme, paprika, and red pepper in a medium bowl; sitr well.
  4. Remove the chicken from the marinade. Dredge the chicken in the cracker crumb mixture. Place in a buttered 13 x 9 x 2 inch baking dish. Drizzle with the melted butter.
  5. Bake, uncovered, at 375 degrees for 45 to 50 minutes or until the chicken is done.
