There are so many layers of flavor and love in these delicious nachos. There's a bit of spice from the Rotel and taco seasoning in the chicken mixture. The taco flavored sour cream is yummy and you can't go wrong when a nachos recipe has tons of cheese on top. If you want to tone back the spice a bit, adjust the jalapenos. Give these nachos a try at your next party or for a yummy snack.

Ingredients For pickels not yo nachos

  • 3
    chicken breasts, cut into slices, boneless and skinless
  • 1
    chopped yellow onion
  • 1 can
    stewed tomatoes, Mexican, 14.5 oz.
  • 1 can
    mild Rotel, 10 oz.
  • 1 can
    black beans, 15 oz
  • 2
    avocados
  • 1 pkg
    guacamole mix
  • 1 pkg
    Mexican taco seasoning
  • 2 c
    sour cream, lite
  • 2 c
    Mexican blend shredded cheese
  • 2 c
    queso shredded cheese
  • 1 jar
    pickled jalapenos
  • 1 bunch
    chopped green onions

How To Make pickels not yo nachos

  • Onion, canned tomatoes, Rotel, taco seasoning, and sliced chicken breasts in a skillet.

    In a large skillet, add 1 chopped onion, the canned tomatoes, Rotel, 1/2 pack of taco seasoning and sliced chicken breasts. Cook for 10 minutes or until chicken is thoroughly cooked. Then remove chicken and shred in a blender.
  • Black beans and shredded cooked chicken added to the skillet.

    Add rinsed and drained black beans to tomatoes, onion, and Rotel while blending chicken. Then add the chicken back to the mixture to cook for another 10 minutes.
  • Taco seasoning and sour cream mixed together.

    Mix together 1/2 pack of taco seasoning and sour cream.
  • Mixing avocados and guacamole seasoning package.

    Mix 2 avocados and guacamole seasoning pack.
  • Chopped green onions in a bowl.

    Chop green onions.
  • Chicken, bean, tomato mixture on top of tortilla chips.

    Plate chips. Top with chicken-onion-beans-tomato-Rotel mixture.
  • Shredded cheese sprinkled on top.

    Add Mexican shredded and queso shredded cheese. Microwave for 30 seconds until melted.
  • A plate of Pickels Not Yo Nachos.

    Top with green onions, jalapenos, sour cream, and guacamole.
